Tomato, Cannellini Beans and White Asparagus Salad
- Tomatoes: refreshing (and healthy). Make sure they’re cooled and of great quality. I always find that eating something refreshing which is full of vitamins makes you feel somehow, well, healthier and better.
- Cannellini beans: filling (and healthy). Legumes have plenty of long chain carbohydrates and fibre, which are healthy indeed and great to maintain your energy levels through out the day. They are also a source of healthy proteins without the fat found in red meat. I’ll write more about that one day.
- Asparagus: healthy. Asparagus are good for the urinary tract and are diuretic, which helps to eliminate toxins better. I actually made this salad when I caught a heavy flu a few weeks ago, and added the asparagus just for the toxin eliminating feature of it all.
Both my cannellini beans and asparagus where from jars. Hey I was ill and just wanted to spend time resting… They do come in jars in very good quality here in Spain so thats ok with me, but of course you can use fresh cannellini beans and asparagus.
500g cannellini beans
3 tomatoes – chopped into pieces
apple cider vinegar
1 teaspoon olive oil
Simply put all the ingredients into a large bowl and toss them around.
